{Pancake Tuesday}

Today it’s Pancake Tuesday also known as Fat Tuesday (translated from Norwegian) basically it’s the last day before Lent so traditionally people eat things they can’t eat during Lent like sugar, white flour and eggs = pancakes or here in Scandinavia it’s creamed filled buns. I love any excuse to stuff my face with something nice so I’m making pancakes today. I like to make mine a tad healthy.

My pancake recipe (crepe version)

2 eggs
350 g flour – i mix white flour with graham flour
600 ml milk
1 table spoon butter
pinch of salt

mix the eggs, add half of milk, salt and the flour
mix to it’s no lumps
add the rest of the milk & the melted butter – mix
let it set for 30 minutes

I like serving them with a squirt of lemon and sugar (British style) or with blueberry jam like in my childhood
